Morning Glory Muffins

2 1/2  cups sugar
4 cups flour
4 tsp. cinnamon
4 tsp. baking soda
1 tsp. salt
4 cups shredded carrots
1 cup chopped walnuts
1 cup raisins
1 cup flaked coconut
6 eggs beaten
1 cup apple sauce
1 cup oil
1 tsp. vanilla

In large bowl mix first 5 ingredients.  Add next 4 ingredients, mix well.  Add remaining, stir until well blended.  Spoon batter into muffin papers.

Bake at 350

Cupcake size: 17 minutes
Muffin size: 27 minutes
